Description:
Exotic dessert made using your everyday BBQ and dipped in fondue style. Perfect for summer!!!

Ingredients:
1 Pineapple
Brown sugar to coat
Sticks dipped in hot water (so that it doesnt catch fire on BBQ)

Dipping sauce:
Dark choc - Lindt or something else
Malibu 125ml
Double fresh cream 125ml

Directions:
Cut the pineapple into slices
Use sticks dipped in hot water to poke thru pineapple slices
Rub some brown sugar on pineapple slices
Place on hot BBQ
When brown sugar caramelises, its ready!

Dipping sauce preparation:-
Melt 1 bar or two of dark choc lindt or alternative in a saucepan
Add in 125ml double fresh cream
Add in 125ml Malibu
Stir till all choc melts and its ready
Serve it in dipping bowls - one each for each guest

Viola!!! Start dipping and enjoying the yummy pineapple slice

Description:
Spicy, sour & sweet juicy salad - loved it since I tried it in Bangkok and Huahin - Thailand

Ingredients:
Cooked prawns, Green papaya or cucumber (shredded), Red carrot (shredded), ground roasted peanuts, dried shrimp, fish sauce, lime juice, sugar, 1 green chilli & 1 red chilli

Directions:
Shred the fruits/vege, Pound garlic, chilli, dried shrimp, add fish sauce, lime juice and sugar in pestle, Pour mixed sauce over shredded fruits/vege, cooked prawns, mix them all together and sprinkle some ground peanuts on top
